Job Description

We are seeking a Food and Beverage Manager for our full-service, luxury, independent hotel in beautiful Nashville, Tennessee. We are looking for a dedicated and skilled Food and Beverage Manager to join our acclaimed fine dining team. This pivotal role supports the General Manager in executing flawless daily operations and upholding our celebrated standards of service. The ideal candidate will possess deep expertise in beverage management, a talent for staff leadership, and a commitment to creating an exceptional guest journey. You will be instrumental in managing the front-of-house team, refining our beverage program, and ensuring every aspect of the dining experience reflects our commitment to luxury and quality.

Responsibilities

  • Operational Support: Work in close collaboration with the General Manager to oversee all front-of-house operations, including service execution, staff positioning, and reservation management, ensuring seamless coordination between the dining room and kitchen.
  • Beverage Program Management: Take ownership of the restaurant's beverage program, including wine, spirits, and non-alcoholic selections. Manage inventory, conduct regular stock takes, control costs, and work with sommeliers and suppliers to curate and update beverage lists that complement the culinary offerings.
  • Staff Leadership & Training: Directly supervise and mentor front-of-house staff, including sommeliers, servers, hosts, and bartenders. Develop and implement comprehensive training programs focused on product knowledge, service standards, and upselling techniques. Conduct performance appraisals and foster a culture of professional growth.
  • Guest Experience Enhancement: Act as a visible and engaging leader on the floor, interacting with guests to ensure satisfaction, build rapport, and address any service issues promptly and professionally. Utilize guest feedback to drive continuous improvement in service delivery.
  • Financial Oversight: Assist the General Manager in monitoring beverage costs, analyzing sales performance, and achieving budgetary goals. Implement strategies to optimize profitability within the beverage department while maintaining an uncompromising standard of quality.
  • Vendor Relations: Maintain and build upon strong relationships with vintners, distillers, and beverage suppliers. Negotiate pricing and terms to ensure the procurement of high-quality products that provide value

Qualifications

  • A minimum of 3-5 years of management or supervisory experience within a fine dining, Michelin-starred, or equivalent luxury hospitality setting.
  • Proven experience in managing beverage programs and inventory, with a strong record of cost control and profitability.
  • Extensive knowledge of international wines, classic and contemporary cocktails, and premium spirits. Advanced sommelier or beverage certification (e.g., WSET, Court of Master Sommeliers) is highly desirable.
  • Experience with restaurant POS systems, inventory software, and reservation management platforms.
  • A degree in Hospitality Management or a related field is an asset.
  • Collaborative Leadership: Ability to effectively support the General Manager's vision while confidently leading the front-of-house team.
  • Financial Acumen : Strong understanding of beverage cost analysis, inventory management, and P&L statements.
